Caramel malts are also known as crystal malts (usually in European influenced brewing). basically they are "mashed" for you, therefore they don't have to be converted. They are available in a wide range of colors and flavors (the higher the lovibond, the darker the color and the more intense the Flavor). use up to 15 percent . Caramel 90 can be described as having a pronounced caramel and slightly burnt sugar or raisins Flavor. It's deep Dark red in color and it also helps with head retention.
