Made with smoked Cakalang or Tongkol or Sulawesi Tuna. The fish has been smoked over 10 hours with Coconut husks & shells. Once smoked, it is sauteed with fresh chili, shallots, garlic, coriander & other proprietary spices then simmered until caramelized.
